The oldest known processed food in the world was discovered near us, in Grotta Paglicci

A study completed in 2014, conducted by the University of Siena, revealed that the oldest evidence of processed food, dating back a remarkable 32,000 years, was found in Grotta Paglicci on the Gargano, in the same province where we at Molino De Vita, nestled in the Monti Dauni, continue to work the resources of our land with dedication.

This extraordinary discovery unearthed traces of starches from wild cereals and acorns, processed by Upper Paleolithic populations who had already developed advanced techniques for transforming plants into food. Thermal pre-treatment, such as boiling or roasting of the grains, facilitated grinding and improved the preservation of food products.
